Blue Strawberry Tuscan Ham on Flatbread

Makes 1 sandwich.
Flatbread cut to sandwich size (about 3 x 4 inches)
1 slice smoked Gouda cheese
1 slice Cheddar cheese
2 tablespoons Parmesan-Herb Mayo
3 ounces Cure 81 ham
1 ounce red pepper strips
Place slice of Gouda and Cheddar cheese on each flatbread slice. Spread Parmesan-herb mayo on cheese slices. Add ham and then red pepper strips. Microwave for 20 seconds and then grill on the panini grill for about 3 minutes, or until done.
Parmesan-Herb Mayo: Combine 3 cups mayonnaise, 1 cup Dijon mustard, 2/3 cup shredded Wisconsin Parmesan cheese and 2 teaspoons dried Italian seasoning.
